Apricot Iced Tea

If you’re planning to entertain guests this weekend, why not serve a refreshing, healthy beverage rather than plain old ice water? People will love taste of this fruity sweet tea, which will fill your home with its yummy, appealing aroma. A cup of mint brings plenty of mouthwatering freshness to the drink, while the touch of vanilla extract also enhances the unique flavor. Apricot nectar adds a hint of sweetness, just be sure to pick up a brand that is 100% fruit juice. No one will believe this light, sweet recipe has no added sugar – and it’s so impressive and delicious, they may not even believe you created the brew yourself! Note: This iced tea tastes best when chilled for up to 48 hours before serving.

Ingredients

  • 16 tea, black, bags
  • 12 cup(s) boiling water
  • 1 cup(s) mint, fresh
  • 6 can(s) apricot nectar, 11 1/2 to 12 ounces each
  • 2 teaspoon vanilla extract
  • apricots, wedges
  • sprig(s) mint, fresh

Recipe Tip:

Chill 4 to 48 hours.

Preparation

1. In a very large heatproof pitcher, combine tea bags, boiling water, and the 1 cup mint leaves. Let steep for 5 minutes. Remove and discard tea bags and mint. Cover tea; let stand for 1 hour. Stir in apricot nectar and vanilla. Cover and chill for 4 to 48 hours.

2. To serve, fill tall glasses with ice cubes. Fill with tea mixture. If desired, garnish with apricot wedges and/or mint sprigs.
